Ceviche offers bright, robust flavors and low calories. The secret to making this South American favorite is starting with the best-quality fish available.

INGREDIENTS

1 lb halibut or Chilean sea bass fillet

½ cup freshly squeezed lime juice

6 T freshly squeezed grapefruit juice

1 whole grapefruit

1 small clove garlic, very finely minced

2 T red chiles, very finely minced*

2 T green chiles, very finely minced*

1 T fresh mint, cut into thin slices

2 T chiffonade of cilantro, cut into thin slices

Salt to taste

Hot sauce, to your desired spice level (Aji Chileno is a traditional Chilean hot sauce, but Sriracha or Tabasco work well, too)

Extra-virgin olive oil
(optional)

* You can order Aji Amarillo paste or dried Aji chiles online and use in place of red and green chiles if you are really looking to go traditional Chilean.

Ceviche is basically fresh, raw fish, marinated in spices and “cooked” in lemon, lime, or any citric juice. The citric acid from the juice denatures the protein of the fish and turns it into a delicious marinated seafood salad. This dish is common in Central and South America, and each country has its own distinct way of preparing it, creating unique and wonderful flavors. Ceviche is low in fat, carbs, and calories and it is also an excellent source of protein.

TO MAKE

(1) With a sharp knife, cut the fish into ½-inch, bite-sized pieces. Place in a bowl, and toss with the lime juice and grapefruit juice. Let sit at room temperature for 15 minutes. (2) Meanwhile, cut the grapefruit in half (at the equator) and using a knife, remove sections of grapefruit. Slice each section in half, the long way. (3) When ready to serve, drain the liquid from the fish, and discard liquid. Add grapefruit to the fish, along with garlic, red chiles, green chiles, mint, and cilantro. Toss gently. (4) Divide among six martini or other cocktail glasses (5) Season with salt and hot sauce to taste. Optional: Drizzle with 1 tsp extra-virgin olive oil per serving (traditional to how they serve it in Chile, but without it, you save 50 calories and 5 grams of fat). (6) Serve immediately and enjoy.
